As the name suggests this is going to be another Egg recipe.
Eggs are my favourite as they are the fastest to cook and are actually pretty wholesome , for those who are not aware one egg is the equivalent, for protein, of 1 oz. of red meat. According to the U.S. Department of Agriculture, Agricultural Research Service, one whole large egg provides 75 calories, 6 g of protein, 5 g of fat, 1.6 g of saturated fat, 0 g of carbohydrate, 63 mg of sodium and approximately 213 mg of cholesterol – more than the daily cholesterol allowance for someone with high cholesterol or heart disease though. Most of an egg’s protein is in the white portion while the cholesterol is found in the egg yolk. Despite their cholesterol content, egg yolks also come packed with vitamins and minerals.
But then that’s enough said on the benefits of eggs .
This recipe came up as I came back from my exercise routine at around 10 AM and I was famished , I wanted to have something tangy spicy quick to eat stuff – and it had to be nutritious and with a protein boost : the best bet was eggs. So I got down to making these super exciting and really delicious eggs
What you need:
Ripe well formed tomatoes – 01
Onion – 1 medium sized
Green Chillies – 2
Spices – Tumeric Powder, Red chilli powder, Salt, Coriander powder, Cumin seeds,
Fresh Green coriander leaves
Time to Cook: 15 Minutes
The how for the eggs :
Hard boil the eggs in water , remember to add some salt or vinegar to the water as it will help in removing the shell with ease once done. Once boiled well – shell the eggs and cut into halves and leave to cool.
The how for the tangy dry stuff :
Fine dice the onions , 1 tomato and green chillies and keep aside. Heat some cooking oil in a non stick sauce pan ( pan should be big enough to accommodate the full qty of the eggs ), add cumin seeds and allow them to pop, add the diced green chillies and then after a minute add the onion and cook till done , once the color of the onion becomes golden add the diced tomatoes and cook till they become soft , add turmeric powder + coriander powder + salt + red chilli powder ( all to taste ) and stir a minute or so .
Once the spices are done add the eggs face down and allow to cook over low heat for 5 minutes , turn the eggs and allow to cook for another few minutes ( be careful that the yolk does not fall off ).
Take off from the sauce pan and serve garnished with tomato slices garnished with green coriander and remember to squeeze some lemon juice for the extraaa tang !
